Low Fat Chocolate Zucchini Muffins

This is a recipe that I found on the internet (sparkpeople.com) and modified to make more healthy. These are super yummah and easy!


  • 1/3 c. boiling water
  • 2 c. shredded zucchini
  • 3/4 c. white flour
  • 3/4 c. whole wheat flour
  • 1/2 c. cocoa powder
  • 3/4 c. sugar
  • 1 + 1/4 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1/4 c. canola oil
  • 1/4 c. plain yoghurt
  • 3 eggs
  • 1 tsp. vanilla
  • 1/2 c. flax seeds
  • 3/4 c. coconut
Preheat oven to 350F.  In large bowl, pour boiling water over zucchini.  Add all other ingredients and stir just until well combined (I would add to make sure that this isn’t super hot when you add your eggs or you’ll cook ’em).  Line muffin pans with paper muffin cups and fill 3/4 full.  Bake 30 minutes or until toothpick inserted comes out clean.
